¿WHY IT IS AUTHOR COD?

The entire production process is unique. To begin with, the cod is line caught one-by-one and once desalted is carefully packaged in a protective atmosphere and ready to cook.

This cod with exceptional organoleptic properties, unlike any other in the market, is the result of years of research.

HOOK AND LINE FISHING

(LINE-CAUGHT COD)

Unlike traditional trawl fishing methods in which the fish is bruised and damaged, Bacalaos El Barquero catches the cod one-by-one using the hook and line fishing method. They are then kept alive in special tanks in the vessel for a specified period. This prevents the death of fish from the stress reaction to the nets, thus ensuring smooth and white meat without traces of blood.

DEEP-FROZEN ON BOARD

The fish is deep-frozen a few hours after the catch, unlike other producers who keep it on ice until the vessel arrives at port.

Since it may take 10 or more days to reach port, the texture of the fish may be negatively affected during the salting process.

This also successfully eliminates the risk of Anisakis, which means that it can be safely eaten raw.

THE IMPORTANCE OF SALT

Once the cod arrives at Bacalaos El Barquero’s processing plant, it is cleaned and gutted before the salting process. It is brine salted first for 2 days. Next, the cod is covered during a limited period with a dry salt with unique mineral properties specially developed by El Barquero.

PERFECT CURING

As Bacalaos El Barquero does not depend on Nordic processors, we control the whole process, ensuring consistent quality during the curing process when the cod acquires the aroma, flavour, texture and flakiness that are the hallmark of our products.

Have you ever wondered why El Barquero’s cod is not stringy? Perfect curing is undoubtedly the key. The salt should not draw out all the moisture or eliminate the minerals.

WATER AND DESALTING

Once the curing process is completed, the salt is removed in a water bath with a controlled temperature and a specific pH.

Bacalaos El Barquero’s R&D department has developed a technology that ENSURES uniform distribution of salt throughout the whole piece, both on the thin and thick parts. This prevents a product that is too salty from being sent back to the kitchen and encourages customer loyalty.

CONTROLLED COSTS

Each cod fillet weighs exactly the same and equals one serving. This makes it easier to control the cost per serving, and the profit margin no longer depends on the size of the piece cut in the kitchen.

SHELF LIFE

The likelihood of losing money due to spoilage is nil. Additionally, once the container is opened, the product will be safe in the refrigerator 4-5 days, like any fresh fish.
